Four restaurant concepts operated by Senator Group have successfully obtained Bioscore Restaurant Certification, thereby reinforcing the group’s commitment to integrating sustainable practices and responsible management into all of its hospitality operations.
The certified establishments are NAOS Costa Ballena, Attitude Gandía, Attitude Banús, and El Palmer Aguadulce, each representing distinct concepts linked to Mediterranean cuisine, leisure, and lifestyle experiences in some of Spain’s leading tourist destinations.
Located in Costa Ballena, NAOS combines Mediterranean cuisine with a culinary concept centered on rice dishes made with fresh, locally sourced fish and seafood, as well as seasonal produce. The concept emphasizes outdoor dining experiences that blend seamlessly with the surroundings, while also incorporating sustainable initiatives such as sourcing locally and cultivating its own vegetable garden.
Attitude Gandía and Attitude Banús have developed a dual hospitality concept that evolves throughout the day depending on the customer’s profile and the time of day. During the day, both venues operate as Mediterranean-inspired pool clubs, offering casual dining, signature cocktails, and outdoor social spaces. At night, the spaces transform into more sophisticated dining and entertainment venues, focused on high-end culinary experiences and more exclusive service.
For its part, El Palmer Aguadulce, located in Almería with views of Cabo de Gata, combines fine dining, leisure, and sunset experiences in a contemporary, laid-back setting. The venue features Mediterranean cuisine, outdoor spaces, and lifestyle offerings tailored to a relaxed and social dining experience.
The certification process evaluated the implementation of a wide range of environmental, operational, and social practices at the four facilities. These include food safety management through HACCP systems, carbon footprint measurement and reduction targets, optimization of energy and water consumption, preventive maintenance plans, and responsible waste management procedures.
In addition, the establishments demonstrated that they have implemented initiatives to reduce food waste through reuse and preservation protocols, charitable donations, and partnerships with initiatives such as Too Good To Go. At the same time, they continue to promote the use of local, seasonal, and sustainably sourced products in their culinary offerings.
The Bioscore Restaurant Certification provides a structured framework for measuring and improving sustainability performance within restaurant operations. The process combines ESG assessment, structured sustainability management through the Bioscore Data Platform, and independent third-party auditing, enabling tourism companies to integrate measurable sustainability criteria into their operational strategy.
